Super Easy Customizable Burritos



Burritos are a delicious and quick meal to make for weekday dinners. The best part is that the recipe can easily be altered for preference. For this recipe I made chicken and rice burritos, but other meats such as steak, ground beef, or pulled pork can also be used and beans can be added.






Yields 6 burritos

Ingredients:
1 box spanish rice
1 red pepper
1 yellow pepper
1 yellow onion
1 tbs vegetable oil (or butter or both!)
1 lb boneless skinless chicken breasts (or other meat of your choice)
2 tsp salt
1 tbs black pepper
1/2 lemon
2 cups grated cheese of your choice (I used a mix of mozarella, jack, and cheddar)
1 bag preprepared lettuce, chopped
4 oz cream cheese
3 avocados, sliced
Package of burrito sized tortillas


First, start cooking the rice per the instructions on the box. The rice should take 15 to 20 minutes. If you are adding beans to your burrito only make half of the box of rice. While the rice is cooking, heat up a good sized frying pan with the oil or butter. Dice the onion and peppers and add to the pan. Cook for 2 minutes.



While the veggies are cooking, slice the chicken into strips. Then add the sliced chicken breasts. While chicken is cooking, add salt and pepper to the pan and then squeeze lemon over (I used lemon pepper seasoning instead of fresh lemon). Stir the pan occasionally until the chicken is cooked through.


Set the chicken veggie mix aside, and now it is time to assemble the burrito! First spread cream cheese over half of the tortilla and cover with a good amount of grated cheese. Then place some of the chicken mix on the tortilla.


Then add some of the rice, chopped lettuce, and sliced avocado.


Then fold over the sides and roll into a beautiful burrito! (Though I always end up over stuffing mine so they don't roll very nicely, but they still taste good!)


Now repeat the assembling process for 5 more burritos, or refrigerate all the ingredients and assemble the others later. One good thing about this recipe is the chicken mix and rice are easily reheated so that you can have burrito leftovers all week!
