Bacon Pancakes and Spicy Sri Racha Syrup

    I have seen this recipe floating around on the internet and decided to try it when my boyfriend's roommate asked for anything with bacon as a treat. I had never candied bacon before so this was quite an experience for me, though it wasn't particularly hard and they were amazing. I also used a Sri Racha syrup on them which my cousin taught me how to make. If you have enough time to candy your bacon this is a super fun and delicious food which we had for dinner, though I wouldn't recommend having them too often.




Ingredients:
1/2lbs of bacon
1 cup brown sugar
Your favorite pancake recipe or mix
Anything you might need for said pancake mix (eggs, water, milk...)
Sri Racha sauce
Syrup

You will also need tin foil for this or you will have a terrible time trying to clean off your cookie sheet.

Preheat your oven to 375 degrees F. Get a cookie sheet (one with sides works better for this) and cover it completely with tin foil. The bacon and sugar make a sticky mess and you want the tinfoil to collect all of it, trust me.

Lay your bacon out on the cookie sheet, it doesn't matter if they overlap, though it might make it a little bit harder to turn them later. Sprinkle half of the brown sugar (1/2 cup) over the bacon as evenly as possible and put it in the oven. check the bacon after 10 minutes and rotate the pan if they don't seem to be cooking evenly. After another 5 minutes (so they've been cooking for 15 minutes) take the bacon out.




Turn the bacon over and sprinkle it with the rest of the brown sugar. Now keep cooking it. This time check it after 7 minutes and turn the pan if necessary (my boyfriend's oven sucks). After about another 5 minutes your bacon will hopefully be cooked. You can leave it in longer if you want the cooked more or take them out sooner. every recipe I have looked at for candying bacon seems to differ by personal tastes.



Take the bacon off the tin foil and put it on a plate. Do not put a paper towel down on the plate or they will stick. They will also stick if you leave them on the tin foil and be a huge mess to take off.



Now you can make your pancakes just like you would any other day. I used Bisquick because it's what we had. Once the bacon had cooled down a bit I tore it up into little pieces and mixed them into the pancake mix like you would blueberries or M&Ms. Cook and serve.






For the syrup:
Warm up your syrup a little bit either in a pot or in the microwave. It should be warm but not overly hot. Then just add sri racha to taste. We used about a tablespoon in about 2/3 cup of syrup.
